OVER NIGHT PUDDING

This tiny powerhouse of a seed does more than just grow on a ceramic cat. Chia means strength, and folklore says ancient cultures used the tiny seeds to boost energy. I’ll buy it – they’re excellent sources of healthy omega-3 fatty acids, protein, antioxidants and even calcium. You can soak up massive amounts of nutrients in just 1 tablespoon. Speaking of soaking – one of the most fun ways to eat chia seeds is after letting them soak for several hours in liquid. Because they absorb about 10 times their weight in water, the tiny seeds expand to form a gel-like pudding.

“Chia pudding” is a uniquely delicious and super versatile breakfast or snack. Simply soak 3 tablespoons of chia seeds in 1/2 cup of water or milk for several hours or overnight. Add other items to the base, like oats, quinoa flakes or flaxseed if you like. When it’s set, have fun with toppings: berries, seeds, nuts and homemade granola are fantastic options.

Not quite sure about the texture? There are countless other ways to use them:

  • As an egg substitute
  • To thicken sauces
  • Added to baked goods
  • Sprinkled on yogurt or salads
